Serves 4
 

Ingredients:

  • 1 lb chicken breast diced
  • 2 cloves garlic, chopped
  • 2 red potatoes diced
  • 1 cup tomato sauce
  • 2 ears of corn (husk off cut in half)
  • 1 qt chicken broth
  • 1 sweet potato diced
  • 1 tsp cayenne pepper
  • 1 cup green pepper, diced
  • 1 tsp salt
  • 1 cup onion, diced
  • 1 tbs olive oil

Directions:

Heat 6 quarts on medium temperature. Add chicken and cook for 5 minutes, stirring frequently. Add remaining ingredients and cook for 1 hour, stirring occasionally until slightly thick.
