Potato Soup

Utensils:

3 qt SAUCEPAN, 4 qt ROASTER & FOOD PROCESSOR
Serves4-6
 

Ingredients:

  • 2 cups potatoes (#3 cone)
  • 2 tablespoons butter/margarine
  • 2 tablespoons onion (#2 cone)
  • 1/4 cup celery
  • 2 1/2 tablespoons salt
  • 2 cups water
  • 1/8 teaspoon pepper
  • 3 cups milk
  • 1 tablespoon flour
  • 1 tablespoon parsley (fine)

Directions:

Preheat pan on medium, add onion and fry slowly until yellow and tender. Then add salt, pepper, and flour. Blend well. Add parsley, celery, potatoes, and water. Mix thoroughly. Cover and place over medium heat until potatoes are tender. This takes about 15 minutes. Add milk. Heat thoroughly.
