Lentil-Brown Rice Casserole

Lentil-Brown Rice Casserole

Quick to assemble so you can unwind after a long day while it cooks.
 

Ingredients:

  • 3 C vegetable broth
  • 1/4 C tomato paste
  • 3/4 C lentils (uncooked)
  • 1/2 C brown rice
  • 3/4 C chopped onions
  • 3/4 C chopped carrots or broccoli
  • 1 t. cumin
  • 1 T. thyme
  • 2 cloves garlic, chopped
  • 1 C grated raw cheddar cheese (optional)

Directions:

  1. Preheat oven to 325°F.
  2. Mix all in baking dish and
    cover, bake for 1 hour.
  3. Remove cover and add cheese. Continue baking for an additional
    20 minutes
