Ingredients:
- 1 lb salmon filet (skinned & cut in half lengthwise)
- 1 tsp minced ginger
- 1 tbs lemon juice
- 2 cloves minced garlic
- 1 cup coconut milk
- 1 tsp soy sauce
- 1 lb fresh chopped & cleaned spinach
- 1 cup diced tomato
Directions:
Spray skillet with cooking spray and turn to medium. Cook salmon until brown approximately 3 minutes and turn. Add remaining ingredients on top of salmon and cover. Cook for 10 minutes, basting frequently with juices from the pan.
