Utensils:

LARGE SKILLET Serves 4
 

Ingredients:

  • 1 lb salmon filet (skinned & cut in half lengthwise)
  • 1 tsp minced ginger
  • 1 tbs lemon juice
  • 2 cloves minced garlic
  • 1 cup coconut milk
  • 1 tsp soy sauce
  • 1 lb fresh chopped & cleaned spinach
  • 1 cup diced tomato

Directions:

Spray skillet with cooking spray and turn to medium. Cook salmon until brown approximately 3 minutes and turn. Add remaining ingredients on top of salmon and cover. Cook for 10 minutes, basting frequently with juices from the pan.
