Angel Hair Pasta w New England Clam Sauce

Utensils:

6 QUARTS & ELECTRIC SKILLET
Serves 4
 

Ingredients:

  • 8 oz angel hair pasta (cooked in boiling water until al-dente)
  • 2 tbs chopped fresh parsley
  • 1 tsp salt
  • 10 oz canned baby clams 1 tsp tabasco sauce
  • 1/2 cup minced shallots
  • 2 tbs fresh grated parmesan
  • 1/2 cup low fat buttermilk
  • 1 tsp cornstarch dissolved in 2 tsp water
  • 4 cloves garlic minced
  • 2 tbs clam juice
  • 2 tbs chopped fresh basil
  • 1/2 cut half and half

Directions:

Put wine, clam juice, garlic and shallots in skillet and bring to whistle. Stir in the canned clams, cook for 3 minutes. Reduce the heat to low and whisk in buttermilk, half and half ad cok for about 2 minutes more to thicken, whisking constantly. Stir salt, parmesan cheese, tobacco, basil and parsley. Serve over angel hair pasta.
