Serves 6
Ingredients:
- 2 cloves of garlic, minced
- 1 tsp salt
- 1 lb pork tenderloin cut into 6 slices
- 1 tsp pepper
- 1 tsp crushed red pepper
- 2 cups choyote squash sliced
- 2 tsp olive oil
- 1 tbs apple concentrate
- 1 cup onion, chopped
- 2 tbs dried cranberries
- 2 tsp fresh copped rosemary
Directions:
Heat electric skillet to 400 degrees. Cook pork for 5 minutes. Reduce temperature to 225 and cover, cooking for 5 minutes longer. Remove pork from pan. Add remaining ingredients to pan stirring frequently for 5 minutes. Mix in pork. Reduce temperature to low and cook for 10 minutes.
