Jamaican Jerk Chicken

Utensils:

LARGE SKILLET
Serves 3
 

Ingredients:

  • 4 oz chicken breast
  • 2 tbs light brown sugar
  • 2 tbs canola oil
  • 1/2 cup minced shallot

Marinade:

  • 3 tbs Jamaican Rum
  • 1 tbs soy sauce
  • 2 cloves minced garlic
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce

Directions:

Prepare marinade in medium bowl.
Place chicken in the marinade, turning coat, marinate for 5 minutes. Place large skillet over medium heat and add oil and sugar. Cook until sugar starts melting. Place the chicken in the pan. Add the onion and marinade, cook for 10 minutes more.
