Chicken Cacciatore

Utensils:

6 qt ROASTER or 4 qt ROASTER
 

Ingredients:

  • 1 1/2 lb – cut fryer
  • 1 onion – chopped #2 cone
  • 1 tall can tomato sauce
  • 1 clove garlic – minced
  • 1 small bell pepper
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1 teaspoon crushed basil
  • 1 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/4 cup dry white wine (optional)
  • 1 or 2 bay leaves

Directions:

Place fryer in cold unit. Chop green pepper and add with tomatoes and spices. Spread over chicken and cook on medium low heat for 1 hour. Make sauce out of juices by thickening with corn starch and water. Delicious when served over rice.
 
NOTES: This recipe may be increased by adding extra chicken and another small can of tomato sauce or even doubled for use in our jumbo sized roasters.
