Tropical Fruit Compote

Ingredients:

  • 1 cup granny smith apples, peeled and sliced
  • 2oz dried cranberries
  • 1 cup naval oranges, sectioned
  • 2 tbs white balsamic vinegar
  • 1 cup mango flesh sliced
  • 1 cup orange juice
  • 1 cup sliced peaches
  • 1 tsp vanilla extract
  • 2oz dried apricots

Directions:

Prepare all ingredients ready for use. Combine orange jice, vinegar and vanilla in a 4 QT and turn to medium temperature and bring to whistle. Add cranberries apricots and bring back to whistle, reduce to low and cook for 2 minutes. Add remaining ingredients, cook uncovered until liquid starts to evaporate and fruits are soft.
